Blue Chip Chocolate Chip Cookies
From The Great Book of Chocolate by David Lebovitz
1/2 c granulated sugar
1/2 c firmly packed light brown sugar
8 tablespoons (1 stick) unsalted butter, cold, cut into 1/2" pieces
1 large egg
1 tsp vanilla extract
1/2 tsp baking soda
1 1/4 c all-purpose flour
1/4 tsp salt
1 1/2 c semisweet chocolate chips
1 c walnuts or pecans, toasted & chopped*
Adjust oven rack to the top third of the oven & preheat to 300°. Line 3 baking sheets with parchment paper.
Beat the sugars & butter together until smooth. Mix in egg, vanilla, & baking soda.
Stir together the flour & salt, then mix them into the batter. Mix in chocolate chips & nuts
Scoop the dough into 2 tablespoon balls & place 8 balls (spaced 4 inches) apart, on each of the baking sheets.
Bake for 18 minutes or until pale golden brown. Remove from oven & cool on a wire rack. Store @ room temperature in an airtight container for up to 3 days.
* - Toasting nuts: spread raw nuts on a baking sheet & toast in a preheated 350° oven for about 10 minutes, stirring once or twice to make sure they are browning evenly. To test doneness, snap open a nut: it should break cleanly & the inside should be lightly brown throughout. Taste a few to make sure they are fresh.
Makes approx. 20 cookies.

Note: this recipe requires the use of a baking scale.
5 oz unsalted butter
4 oz granulated sugar
4 oz brown sugar
pinch salt
3 oz eggs (beat them first before pouring to get the proper weight)
1 tsp vanilla extract
10 oz pastry flour, sifted
3/4 tsp baking soda
10 oz chocolate chips
4 oz chopped walnuts or pecans
Preheat oven to 375°. Line cookie sheets with parchment paper.
Cream the butter, sugars, & salt together. Carefully add in eggs and vanilla extract.
Add in the flour & baking soda. Finally, blend in chocolate chips & nuts.
Drop rounded teaspoons of dough onto the sheet. Bake for 10-14 minutes, depending on size. Yield varies. I think the last batch had about 30 cookies.
