As most of you guys know, I'm in my second year of culinary school. A few months ago, I applied for a chance to do my practicum in France, and I was accepted! I'm flying out next week to work at a restaurant outside near the west coast of France.

Once I establish a decent internet connection overseas, I will be maintaining a travel blog on Tumblr with updates and photos of my trip. So check it out maybe? :3

My payment for school was due on the 5th. There was no e-mail or anything else to tell me, "Hey, all payments are due 8/5. Please follow this link to make your payment". I don't check the website every single day. I checked it a little while ago for work purposes, but the reminder is in the corner, looking very inconspicuous. It's in bold lettering, and that's about it.

Anyway, I managed to salvage my nutrition class for Wednesdays. I paid it in full up front just now. What sucks is that I lost my spot in Advanced Baking, and that class is a pain in the butt to get into. It was already 50% full when I did the priority scheduling.

I'm definitely going to be busting my ass next semester. If it's only available on Fridays, I can double that with Cake Design and stay on campus for the whole day. It's gonna suck hard, but I can do it. And I WILL pay off part of it to hold my place.

I has a C+ in Purchasing. I coulda done better, but I'm not unhappy. It's a tough class to begin with.

At least I still have my A in Hospitality. :3

So my first year of school has officially ended. I don't have my Purchasing grade yet, but I passed Intro to Hospitality with flying colors. It feels weird not to have to wake up early on Monday morning, but don't worry. That'll change come June when I take a month-long crash course in Sanitation. 4 days a week at the Cheyenne campus for 2 hours a day. I'm just glad it's only for the month of June.

Other than that, it's been pretty uneventful around here. The RP scene has been stable, been hanging out with friends, and cooking more at home. Hell, we're even getting [ profile] xdevilskissx back on track.

I still wish I could visit Texas this fall. But that's okay. I have an awesome trip set up now that I've filled out my vacation slip for Labor Day.

So yes, quiet days have been quiet...

I'm in school right now to change my career path. If anything, I just wish I started sooner. Though I am very pleased with CSN's culinary/hospitality curriculum.

I woke up around 8am, took a shower, went to my Intro to Hospitality class at CSN, talked about my goals and the different aspects of the industry, went home at 12:30pm, took a nap, came to work, and I am now going to review my notes for a possible quiz tomorrow in my Purchasing class.

I just checked my grades for the semester. I seriously thought I was going to bomb after how my cooking final turned out despite how hard I rocked the baking final. I passed both classes with a B and a B- respectively.

Awww yeah. Now I need to see if I can sign up for the chocolate course over the summer. Not to mention that I have the spring semester around the corner. Fortunately, I'm taking a break from all that cooking. Time to learn the other side of pastry arts, stuff like purchasing and the outline of working in the Hospitality Industry!


I need to start planning for my Texas trip. So far, I have a place to crash in Austin (thanks, Eric!), and I know how much my ticket to Houston and a rental will set me back. Sadly, my friend Todd won't be joining me.

Also, this trip will be more of a scouting mission. I wanted to check out apartments and the like, so if some of you guys want to come along and show me around, you're more than welcome to do so. If it's in my budget, I'll even buy booze for you guys. XD

Well, I had my written final today. It looks like I'll be passing my baking class with a low B-high C range. Not too bad, though the main thing that counted against me was missing a class. I couldn't make it up since my car was still being an ass and the only time I could've made it up was on Tuesday, which in turn clashed with my regular cooking class. Oh well. Still, I learned a TON about baking. :D And I've learned I am an exquisite candy maker as well as a baker. Hmmmm...

With my classes over for the semester, I think it's safe to say that I'll be returning to mostly-normal RP tags and plotting. My work schedule still blows (3 weeks and only 3 days off? LAME), but at least I have internet access.

That said, I'll be working on some article I've been meaning to write for Pinecone Attack! while I'm at work. If anyone needs me, I'll be in my trailer.

The last of the packages have been sent. My brother -really- better enjoy that wine because it cost an asston to ship it express. And it was illegal because shipment of alcohol to New Jersey is prohibited. Huuur. I'm praying for the final packages to make to their destinations safely!

...I should study my notes for a bit. Or should I start another round of Final Fantasy VI?

This week I'm thankfully off from school. I have an idea of what to do for my take home assignment, since I'm one of the few students that isn't hooked on the Food Network. The best food shows are on the Travel Channel, DUH! XD And I doubt my instructor will let me do a 3-4 page report on how awesome Andrew Zimmern and Adam Richman are.

So I'll be writing a report on Crown & Anchor. It'll give me an opportunity to learn the name of their head chef and get a free hat out of the deal. All I have to do is drink... a... Bud... Light...

I was batting 1000 today in class. :| I messed up the head count so we ended up with more fruit than needed, my tart shells should have come out sooner, and my finished fruit tarts looked decent at best. It was not a creative day at all. XD

I'm in the minority when it comes to fruit tarts. The fruit's arranged and piled on to look attractive, but outside of the giant ones that can be sliced, how am I supposed to eat it? On top of that, I don't want to eat it because it looks so pretty. I'd much rather have mine look good and taste great and not vice versa.

At least I think I did well on the quiz.

I think I just need to calm down a little and take a breather. Beer sounds good, too.

After a loonnggg week, I has a question for you guys:

I'm at a loss on what to do this time around, so I'm turning to you, the viewer!

Today was the day of bakery pain. Nothing bad, just a lot of running around. We made soft rolls on top of our assigned pies because the CSN student restaurant ran out. At least my apple pie turned out well. Next week will be throwing cream pies.

Also, I came to a realization: One of my cooking classmates is the physical embodiment of Josuke. I am not kidding here. He's a teenager, a total sweetheart and a dork at the same time, and yes, he even has a slight pompadour.

It would be my baking class.

Today we learned how to make various creams, dessert sauces, and syrups. We all had to make separate recipes, so we ended up with over 12 different kinds of toppings. Then once we were all done, the instructor let us sample each other's work, and DAMN. My chocolate pastry cream turned out really well, though the vanilla one was a bit runny. ;; The crowning sauce of them all was the Sabayon. It's sugar and egg yolk cooked over a double boiler until thickened, and then wine is added. It was AMAZING.

The other awesome sauces (lol awesomesauces) were the chocolate mousse and the melba sauce. And combining the melba sauce (raspberry puree combined with currant jam) with the chocolate ganache = orgasmic.

All in all, a fun day with a ton of sugar.

Today marked my first day as a student of the Pastry Arts. The drive to the Cheyenne campus was surprisingly smooth, although it got a bit messy towards the end. But it wasn't anything serious and I made it to school on time. AND I found my classroom on time, too! It was a big accomplishment since you guys know I have a horrid sense of direction.

My basic cooking instructor seems pretty cool, though he admits he's from the old school. He's okay with my ink and hair (along with my fellow students' ink), but he's not the type to get it done to himself. I have yet to meet my pastry instructor, but I heard he's a bit tough. And I heard he's gonna make us wear the little neckerchief ties that the classic chefs used to wear. You better believe I'm gonna be wearing one!

Highlight of the day: During class, we had a mini-demonstration of what was required in terms of knives. The chef started talking about the main knife that's used: the French knife, AKA the Chef's Knife. He told us where to buy them, and it took all of my willpower to restrain myself from saying, "Or you could just mug a Tonberry."

All in all, I'm glad I chose the community college over the other culinary schools. Turns out they rock hardcore, moreso than the expensive places.

Now for stuff I need to buy:

-Knife set (preferably not a set that's been stolen from a Tonberry)
-A pair of chef shoes
-Uniform with my name and school embroidered on it
-Draw a pic of El Fuerte wearing said uniform

I'm headed back to CSN tomorrow. I really hope the drive isn't nearly as bad as I'm picturing it. Why can't they have culinary classes on the Charleston campus? Cheyenne @ I-15, here I come! The drive back is gonna be worse, I know it...

Also, I think my RP drive is slowly starting to come back. I still need to get some creative juices flowing for everyone, though. Maybe I should app someone new to CB... maybe...

We'll see how this school gig goes before I make any major decisions.
