The truffles were a HUGE success. The way all of you talked about them inspired me greatly, and I will continue to pursue a path in the art of candy making and ice cream.

Also, thanks to the cookie dough truffle recipe, I think I have a base for homemade cookie dough ice cream. And that chocolate? Totally worth the price. XD

Again, thank you all for signing up. I look forward to the end of the year so I can do it all over again.

I just finished washing the dishes. Everything is done, divided, and packed. Tomorrow I'll be shipping out the first wave of orders. After that I STILL need to buy more boxes. Office Max only had a small amount, but I will get them all out by the end of this week.

Also, my chocolate chambord truffles? Better than last year's. It's seriously orgasm-inducing chocolate. And the rest are pretty damn awesome, too. :d

Cookie dough truffles are DONE. Had to use two days due to running out of coating and being run ragged for the last ingredients. After my late lunch I'm starting the oreo truffles. Don't worry; I have plenty of coating this time around. Also, I'll be decorating these since there are two flavors. :d

You guys are awesome. I have almost 2 dozen orders for my truffles! I'm almost done gathering the supplies. I just need to run to the liquor store for Chambord and then double check my containers to see if they qualify for a flat shipping fee. Oh, and I can't forget the candy cups! XD

Man, I can't wait to get started. I so want to use those boxes of Guittard I bought.

This is the final reminder for any of you folks that want some holiday chocolates. Unless you specify that you want only one or two kinds, you're getting an order of all 3 truffle varieties. It's that time again where I send out my holiday packages of sugar. This year I'm doing strictly truffles with 3 kinds to choose from:

-Peppermint Oreo
-Cookie Dough

Bad news: still no sign of my HS diploma. I know it's packed away in one of these millions of boxes.

Good news: I managed to reduce some clutter in the closet. Woo!

I've decided to give up my cigar box collection. I'm keeping a couple for storage purposes, but the rest I might just sell on craigslist. But if anyone's interested in them for craft purposes, let me know. I have... quite a few boxes.

Also, I located a recipe that I was supposed to give [ profile] faetan ages ago. So for you, here's a recipe for easy Chocolate Mousse:

(Note: it's supposed to be a low-calorie version, buuut I threw that idea out the window and used full fat everything.)

3/4 c milk (it says use 1%, I say go for whole)
1 pkg whipped topping mix
2 envelopes fat-free hot cocoa mix (I used dark chocolate mix)
1/4 c unsweetened cocoa powder
Whipped topping and chocolate curls for garnish (optional, but go for it >:3)

At low speed, beat milk, topping mix, cocoa mix, and cocoa powder until combined. At med-high speed, beat until fluffy (aboot 4 minutes). Toss in the fridge for at least 20 minutes. Garnish with whipped topping and curls before serving.

Also, I made some of those Guinness cupcakes and DAMN. [ profile] nanaki_muyo gave them two whole thumbs up, even though the Bailey's frosting was a little softer than I wanted. Still, they turned out awesome.

Taken from my basic cooking text. I'm actually not a huge fan of bell peppers, but I do love me some basil. Enjoy!

Basque-Style Pepper Salad

2lb 6oz Red Bell Peppers
2lb 6oz Green or Yellow Bell Peppers

1pt Olive Oil
4fl oz (8 tbsp) White Wine Vinegar
Salt & Pepper to Taste
2 1/2oz Fresh Basil Leaves, shredded finely

Roast & peel the peppers. Remove the core, seeds, & veins. Cut peppers into 1/2" thick strips.

Combine oil, vinegar, salt, & pepper to make a dressing. Pour over the peppers in a bowl & marinate for at least 2-3 hours.

Just before serving, add the shredded basil & mix with the peppers. If desired, save a few whole leaves for garnish.

16 servings in 6oz portions

1) Copy this list into your blog or journal, including these instructions.
2) Bold all the items you've eaten.
3) Cross out any items that you would never consider eating.
4) Italicize foods you can't remember if you've had or not, but it seems like you should have, or you're pretty sure you have, but can't remember when.
5) Underline foods you would eat but haven't had the opportunity to.

I thought about what recipe to give you good folks, and I'm torn. There's my truffle recipe from my chocolate book, or the cookie recipe from my baking textbook. The only issue with the latter is that everything needs to be scaled off. So let's go with ze truffles.

This recipe comes courtesy of The Great Book of Chocolate by David Lebovitz. He's an American pastry chef who resides in Paris. He's easily one of my role models and his books are amazing.

Chocolate Truffles

3/4 C Heavy Cream
8-10 oz. Bittersweet or Semi-sweet Chocolate, chopped
1-3 tsp. Cognac or favorite liqueur


4 oz. Bittersweet or Semi-sweet Chocolate, chopped
1/2 C Unsweetened Cocoa Powder

In a small saucepan, bring the cream just to a boil. Remove from the heat and stir in chocolate until melted. Add liqueur. Pour into a bowl and let stand for at least two hours. If desired, you can chill the mixture, but let it warm up before handling.

Using your hands, a melon baller, or a soup spoon (you'll want to dip the latter two into a bowl of warm water while scooping), scoop the mixture into 3/4" balls. Shape them with your hands into balls and place them on a plate.

Chill truffles thoroughly.

Melt the remaining 4 oz. of chocolate in a saucepan or in a bowl over simmering water. Spread the cocoa powder in a pie plate.

Spread a little chocolate on your hand. Smear the truffle in the chocolate-coated hand and place in cocoa. After doing several, you can shake the pie plate until the truffles are evenly coated. Repeat with remaining truffles.

They can be served immediately or frozen for up to 10 days. Enjoy!

Since I can't seem to count, I realized that I forgot one of the days. SO! In a ninja edit, I'll show a talent as well as a hobby. Two for one! :D

According to my familia, I have a penchant (yes, a penchant. I am fully aware of how snooty it sounds XD) for drawing. I've been drawing since I was little, and while I do have my dry spells, I haven't really stopped. Recently though, I found out that I'm a pretty damn good candy maker. My baking gets a lot of good reviews, but my candy gets rave reviews like you wouldn't believe. I'm seriously considering doing candy and ice cream as well as baking as a career in the future.

Now for a hobby!

I have my usual hobbies such as drawing and writing, but today I share this one with you:


No, seriously.

I love drinking different kinds of beer and writing about them. Slowly but surely, I'm learning my way around domestic and import brews, the different kinds, and what to look for in a good beer. So far, I've found that I LOVE stouts. Guinness is my fave, though Left Hand's Milk Stout is incredible. Hefeweizen is my second favorite kind, with Sin City Brewery's Hefe being my absolute favorite.

I also collect the bottles from the beers I try, so one day I can display them.

I just checked my grades for the semester. I seriously thought I was going to bomb after how my cooking final turned out despite how hard I rocked the baking final. I passed both classes with a B and a B- respectively.

Awww yeah. Now I need to see if I can sign up for the chocolate course over the summer. Not to mention that I have the spring semester around the corner. Fortunately, I'm taking a break from all that cooking. Time to learn the other side of pastry arts, stuff like purchasing and the outline of working in the Hospitality Industry!


I need to start planning for my Texas trip. So far, I have a place to crash in Austin (thanks, Eric!), and I know how much my ticket to Houston and a rental will set me back. Sadly, my friend Todd won't be joining me.

Also, this trip will be more of a scouting mission. I wanted to check out apartments and the like, so if some of you guys want to come along and show me around, you're more than welcome to do so. If it's in my budget, I'll even buy booze for you guys. XD

Well, I had my written final today. It looks like I'll be passing my baking class with a low B-high C range. Not too bad, though the main thing that counted against me was missing a class. I couldn't make it up since my car was still being an ass and the only time I could've made it up was on Tuesday, which in turn clashed with my regular cooking class. Oh well. Still, I learned a TON about baking. :D And I've learned I am an exquisite candy maker as well as a baker. Hmmmm...

With my classes over for the semester, I think it's safe to say that I'll be returning to mostly-normal RP tags and plotting. My work schedule still blows (3 weeks and only 3 days off? LAME), but at least I have internet access.

That said, I'll be working on some article I've been meaning to write for Pinecone Attack! while I'm at work. If anyone needs me, I'll be in my trailer.

The last of the packages have been sent. My brother -really- better enjoy that wine because it cost an asston to ship it express. And it was illegal because shipment of alcohol to New Jersey is prohibited. Huuur. I'm praying for the final packages to make to their destinations safely!

...I should study my notes for a bit. Or should I start another round of Final Fantasy VI?
